Can Americans still get into Canada with a DUI on their record? I’ve heard you have to wait seven years, but I’d like to know if this is true?

Canadian border officials can deny entry to anyone with a criminal conviction, and D.U.I. falls under that category. It would be better to apply for a pardon before trying to get in with that on your record.
